The kitchen
From father to son, an extraordinary impetus, a never-ending exchange. For each of them, cooking arrived rather as an unexpected destiny. René, who was set to become a skiing instructor, was hired for a day as washer-up in a restaurant, stayed on, graduating in time to other positions, before finally throwing himself into the restaurant business full-time. Maxime, on the other hand, a former biathlete, when faced with a disappointment decided to “enter the world of pastry-making”, to learn about perfection, demanding standards… and then move on from good pastry chef to good chef. Their two common points?  The same desire to shake tradition, to “try harder”, more often than not using the resources of the mountain itself. And then, the same love for their valley, for its extraordinary relief. Another reason, they say with tongue in cheek, why their innovating cooking is free from any platitude.

Architecture, History:
Firstly, a name:  “Bouitte” which, in local Savoy dialect means “little house”. Then, the story. La Bouitte has been built in the family home, that, slowly but surely, has evolved from a restaurant serving excellent tartiflettes to 30 years later … the table where you can relish an astonishing pigeonneau sur foin, from an old rustic Savoy chalet to the warm and inviting house with its warm wood decor, with its comfy bedrooms, the spa as welcoming as it is innovating.
